Considered a weed by many, Dandelions also have many medicinal and culinary uses. All parts of the plant can be used for medicinal purposes. The youngest leaves tend to have the mildest flavour and the most tender texture. Older leaves may need to be blanched or stir-fried. Any bitterness in the leaves can be lessened by growing them in partial shade, or by placing a plastic or cardboard disc over the rosettes for a week prior to harvest. For beer and wine making, harvest the flowers as soon as they open. Pull up whole plants at the end of the season and dry their roots for use as tea or dye. The leaves can be used like chicory in salads, or cooked like many Asian greens, while the flowers petals can make a great garnish for salads and desserts.
