Dianthus caryophyllus
Hardy perennial growing to 60cm in a variety of colours. Fragrant, double flowers with deeply fringed petals. Good in beds and pots and most popular cut flower. Raised beds are recommended, with well-drained soil. Nip tips when 15cm high to encourage branching, best results when old flower heads are also nipped. Cut back healthy plants annually.
Once removed from the bitter stem, flower petals can be steeped in wine, added to salads and aspics, candied, or used as a cake decoration and as a garnish.
