Cultivated in Mexico thousands of years ago, and now used widely across Malaysia, Indonesia, Vietnam, India, and China, and in some areas of Africa and Europe, the leaves and seeds of amaranth are both edible.
The seeds are high in protein and taste similar to true grains grown from grass seeds.
Considered a herb, amaranth is commonly used with cumin, chile peppers, onions, and garlic.
Used either raw in salads and sandwiches like lettuce and spinach leaves, or cooked in stir fry and soups.
