Best used fresh from the ground as the roots deteriorate fairly quickly.  If storing, store at 0C in a fridge or root cellar.

Tragopogon porrifolius

Also known as ‘Oyster Plant’.

Oyster-flavoured root vegetable with white flesh, grow like carrots and parsnips.  New shoots look like grass. Young plants can withstand a light frost, mature plants can withstand heavy frosts. Roots store well at low temperatures and at high humidity. Dig roots in late autumn just before the ground freezes. Flavour is strongest after several frosts. Apply a mulch in cold regions for winter survival.

The young shoots and purple flower buds produced in spring of the second year may be eaten.  New grassy shoots give a nice flavour to salads.  May be fried or boiled like parsnip and eaten alone or used in soups and stews. Can be preserved or canned over winter.
