A hardy winter or cool season vegetable that is so resilient it can even survive mild frosts. The plant is a barrel-like root with large leaves and white skin.

Use the root in soups and stews or boil it like a turnip. Slice the bulb for salads and sandwiches and the leaves can be used like spinach or silverbeet.
